Ingredients
- ¼ C Cannabutter (recipe in Blog), divided
- 1 Yellow Onion, Chopped
- 2 Cloves Garlic, Chopped
- 2 Lbs Ripe Tomatoes, Chopped
- 1 tsp Dried Basil
- ½ tsp Salt
- ½ tsp Black Pepper
- 2 cups Chicken Stock
- 2 TB Flour
- Directions
- Add 2 TB Cannabutter to large pot over medium heat
- Saute onion and garlic for a few minutes just till onion begins to soften
- Add tomatoes and cook for 3-4 min, until they start to break down
- Add basil, salt and pepper and chicken stock to the pot and bring to simmer
- Simmer for 15 min an med-low heat,stirring occasionally
- Blend using immersion blender or regular blender in batches
- Using a clean pot add the remaining cannabutter over low heat
- Whisk in flour and cook for a min or two until roux is lightly browned
- Slowly whisk soup into the roux.
- Cook over low heat for a few minutes then enjoy!
- Garnish with Parmesan Cheese Chopped Chives, Buttery Croutons
